INGREDIENTS
4 firm eating apples, peeled and cored
115g/4oz/1 cup plain (all-purpose) flour
about 100ml/4fl oz/1/2 cup cold water
1 egg, beaten
vegetable oil, for deep-frying, plus 2 tbsp for the toffee
115g/4oz/1/2 cup granulated or caster sugar

Toffee Apples
Cut each apple into 8 pieces. Dust each piece with a little of the flour.
Sift the remaining flour into a mixing bowl, then add the cold water and stir to make a smooth batter. Add the beaten egg and blend
well.
Heat the oil in a wok. DIp the apple pieces in the batter and deep-fry for about 3 minutes or until golden. Remove and Drain.
Heat 2 tbsp of the oil in the wok, add tl sugar and stir continuously until the sug has caramelized. Quickly add the apple piec and blend well
so that each piece of apple coated with the ‘toffee’. Dip the apple pieces i cold water to harden before serving.
