Plain Boiled Rice

Serves 4-6
INGREDIENTS
400g/14oz long grain rice
1 tbsp vegetable oil
700ml/1/1/4 pints/3 cups boiling water
1/2 tsp salt

Wash and drain the rice several times in cold water until the water is no longer starchy. Put the rice in a heavy saucepan, add the

vegetable oil, water and salt. Stir once to prevent the rice from sticking to the pan and simmer for 10—12 minutes. After this time, remove from

the heat, cover and allow the rice to steam in its own heat for a further 5 minutes. Fluff the rice with a fork or chop­sticks before serving.
