Serves 4-6
INGREDIENTS
7 tablespoons olive oil
1 garlic clove, crushed
325 g/11 oz onions, sliced
1 quantity Basic Pizza Dough
50 g/2oz anchovy fillets, roughly chopped
75 g/3oz black olives, pitted and roughly chopped
1-2 tablespoons capers, chopped
extra oil, for frying
pepper
1 quantity Tomato and Bacon Sauce to serve

Fried Pizza Pies
Heat 3-4 tablespoons of the olive oil in a pan and cook the garlic and onions over a gentle heat until they are soft and lightly coloured.
Place the dough on a lightly floured surface and work in 2 tablespoons of olive oil. Roll the dough out thinly and cut out rounds with a
7-8cm/3-3/1/2 inch pastry cutter. Place a portion of the onion mixture in the centre of each circle with some of the anchovies, black olives and
capers. Brush around the edge with water. Fold the dough over and press around the edge with a fork to seal well.
Fry the pizzas pies in batches in shallow or deep hot fat until they are golden brown all over. Sprinkle with a little pepper just before serving
and serve as hot as possible, with the tomato sauce handed separately.
These pizza pies can also be baked in the oven. Brush them with oil on both sides and place on a baking tray, leaving room for them to
rise. Leave in a warm place for about 30 minutes, then bake in a preheated oven at 230°C/450°F/Gas Mark 8 for 10-15 minutes until crisp and golden brown.
