150g/5oz soft butter
150g/5oz smooth peanut butter
1 teaspoon vanilla essence
225g/8oz soft brown sugar
2 free-range eggs
200g/8oz plain flour
1 teaspoon baking powder
1/2 teaspoon salt

Peanut Butter Cookies

Preheat the oven to:180°C/350°F/gas Mark 4.

Put the butter, peanut butter, vanilla essence and sugar into the mixing bowl and beat together. Next, beat the eggs with a fork and then beat them into the mixture.

Sift the flour, baking powder and salt into the peanut butter mixture, and mix together until the mixture is smooth.

Drop tablespoons of the mixture on to the baking sheet. You don’t have to spread them out. Then put them in the oven. Bake them for 10 minutes if you like them chewy, or for 15 minutes if you like them crispy.

Let the cookies cool on the baking sheet for 5 minutes and then move them to a wire rack to cool down completely.

Extras
Try adding 100g/4oz chopped raw peanuts or chocolate chips to the mixture, or arrange peanuts and chocolate on the top of the cookies to look like faces.
