INGREDIENTS
1 quantity Golden Gingerbread mixture
2 quantities Icing Glaze
red and green food colourings
175g/6oz white almond paste

Glazed Ginger Cookies
Preheat the oven to 180°C/350°F/ Gas 4. Grease a large baking sheet. Roll out the gingerbread dough on a floured surface and, using a
selection of floured cookie cutters, cut out a variety of shapes, such as trees, stars, crescents and bells. Transfer to the prepared baking sheet
and bake for 8-10 minutes, until just beginning to colour around the edges. Leave the cookies on the baking sheet for 3 minutes.
Transfer the cookies to a wire rack and leave to cool. Place the wire rack over a large tray or plate. Using a dessertspoon, spoon the icing
glaze over the cookies until they are completely covered. Leave in a cool place to dry for several hours.
Knead red food colouring into half of the almond paste and green into the other half. Roll a thin length of each coloured paste and then twist the two together into a rope.
Secure a rope of paste around a biscuit, dampening the icing with a little water, if necessary, to hold it in place. Repeat on about half of the
cookies. Dilute a little of each food colouring with water. Using a fine paintbrush, paint festive decorations over the plain cookies. Leave to dry and then wrap in tissue paper.
