EASTER BUNNY COOKIES

MAKES 16-20

Ingredients

350g/12oz self-raising flour
A pinch of salt
200g/8oz butter, chilled, cut in cubes
100g/4oz caster sugar

Decoration:
Chocolate chips or green ball sprinkles for the eyes

Preheat the oven to 200°C/ 400°F/ gas mark 6. Put the flour, salt and butter in a mixing bowl and rub it together with your fingertips until it looks like breadcrumbs.

Add the sugar and stir the mixture until it forms a dough.

Dust a work surface and rolling pin with a little flour and roll out the dough until it is 1cm/ 1/2 in thick.

Grease the baking tray with a little butter, then cut out bunny shapes with a cookie cutter and transfer them to the tray using the palette knife. Put a chocolate or green ball on each cookie for an eye.

Bake them in the oven for 15 to 20 minutes or until golden. Then put them on a wire cooling rack, and leave them to cool.
