MAKES 16-20
Ingredients
100g/4oz softened butter
75g/3oz soft brown sugar
75g/3oz caster sugar
1 free-range egg
1/2 teaspoon baking powder
1/2 teaspoon vanilla essence
225g/8oz plain flour
150g/5oz milk chocolate chips
Extra butter for greasing the baking sheets

Put the butter and sugars into a bowl and beat together until the mixture is creamy.
Then break the egg into the bowl, add the baking powder and vanilla essence, and beat into the mixture until smooth.
Now stir in the flour a little at a time so it’s well mixed, then stir in the chocolate chips.
Rub a little butter over the baking sheets so the cookies don’t stick, then put teaspoonfuls of the mixture on the sheets, making sure there is plenty of room between each one because the cookies will spread out during baking.
Put them in the oven and bake for about 12 to 15 minutes. The cookies should be golden and firm.
Leave them to cool for 5 minutes and then put them on the wire rack to cool down completely.
EXTRAS
For double-choclate cookies, add 2 tablespoons unsweetened cocoa powder to the mixture when you add the flour. For treble-choclate cookies add the cocoa plus 75g/3oz white chocolate chips! You could also try adding 100g/4oz chopped nuts for choclate nut cookies.
